Can I show a specific metric to only one investor as a portfolio company user?

When adjusting your metrics table (as a portfolio company user), the "Requested by" filter indicates which investors have included that specific metric in their custom reporting templates.

Even if an investor is not actively requesting a metric from you, they will still see it in your metrics table if another investor has requested it or if you have added it manually yourself. Because the metrics table is shared across your connections, all connected investors can view any data currently in that table.
